Plant Based Budda Bowl

Lunch is often a meal I end up missing or not eating at all when life gets busy. I find sometimes I loose all track of time, and if I don't have something in the fridge ready to go I will end up a hot mess by 3pm, too late for lunch but too early for dinner. 

I began this week by cooking 1 batch of brown rice, and one batch of quinoa, which I mixed together and used as a base for my lunches all week. I cut all the veggies, and put them into a separate container so the rice & beans could be reheated, and veggies added afterwards as garnish.

Veggie Bowl

This plant based protein bowl was one of the meals I created and LOVED! It's is easy, and so filling.

INGREDIENTS:
  • Cooked Brown Rice + Cooked Quinoa (follow directions and portion as you'd like, approx 1 cup per serving)
  • 1 can chic peas
  • 1 tbs Sesame Oil
  • 2 cloves garlic 
  • Green Onion sliced
  • Carrot shredded
  • Cucumber
  • Whole Food Mayo (I make mine from scratch HERE)
  • chipotle, paprika, garlic powder to taste

 Heat skillet with sesame oil, and add chic peas. Saute until warmed. Layer the warmed rice with the chic peas. 

Plant Based Lunch

Mix the mayo with chipotle, paprika and garlic powder.

Add vegetables and chipotle mayo, salt and pepper as needed.
